Skinny Beef Nachos

It took me quite a long time to make the perfect plate of skinny beef nachos and being on Weight Watchers and all chips are a big deal to me. Nachos are probably one of my favorite foods to eat. I could snack on tortilla chips and salsa at Mexican Restaurants all day long since they are free, dip the chips in queso sauce, etc but Chips are best loaded with toppings!

Tortilla chips are high in points. My favorite brand of tortilla chips are the Donkey Chips and you can find them in the Natural Food section at your grocery store. They are low in sodium but just 12 chips alone can be 6 points. When you start piling on all the extra toppings for nachos, that can get pretty high up there. No thank you.

Best Method to Make Nachos

  1. First there's the sheet pan method. If you don't have an air fryer you can lay out these lavash chips and just bake them in the oven until they are golden brown and crispy and then load them with the toppings.
  2. Layering Method - This is by far the best method in my opinion. I used to just pile all the chips on a plate and then start loading on all the nacho toppings. Nope. Never again. You start with one layer first and then keep on adding on layers after you got all the chips prepped.
  3. What nacho making method do you use? Do you have any secret to making the perfect plate of nachos?

Nacho Toppings

When it comes to nacho toppings there's plenty out there. Being on Weight Watchers just think of all the zero point toppings you could possibly do.

  • 99% Lean Ground Turkey or Chicken to sub for ground beef
  • Pico De Gallo -freshly made or store-bought
  • Black Beans
  • Corn
  • Green Onions
  • Fat Free Refried Beans
  • Hot Sauce
  • Cilantro

Zero Smart Point Salsa - Check out my salsa recipe that goes well on top of nachos or anything Mexican food!

Protein for Nachos:

I love to use 93% lean ground beef when making nachos and I'll always add in a packet of low sodium taco seasoning. If using 93% lean ground beef, for 3 oz the smart points come to 4 points. You can use 99% fat-free chicken or turkey to make it 0 points.

Homemade Tortilla Chips

Like I mentioned above, the points for nachos can really very depending on what type of tortilla chips you use. There are many store bought tortilla chips out there but it is best to make your own using corn tortillas, flour tortillas etc. Josephs lavash wraps are only 60 calories and then I cook them in my air fryer at 400 degrees for 3 minutes. I heard about Josephs Lavash wraps on Instagram and gave them a try and really liked them. You can also bake the tortilla chips in your oven at a higher temp like 400 degrees for 10 minutes. If using your air fryer the chips get done in no time and they turn out super crispy!

FAQs

What is the secret to good nachos? ›

One layer of chips and toppings is good. A double layer is better. For maximum crunchy-to-gooey texture, start with a layer of chips that completely covers the bottom of your tray. Then, slather it with any toppings that need to be hot and/or melted, like beans, shredded meat, and cheese.

How to make nachos that don't get soggy? ›

* Bring refrigerated toppings to room temperature before piling them onto the warm chips. * To prevent the chips from getting soggy, sprinkle grated or crumbled cheese on top and bake them in the oven for a few minutes. When melted, the cheese will act as a buffer between the chips and toppings.

How to keep chips crunchy when making nachos? ›

Limiting the number of ingredients baked with the chips is the key to crispiness. Top chips with no more than two or three toppings. Choose from items such as black beans, refried beans, chopped grilled chicken, seasoned ground beef (browned and drained), or chopped jalapenos.

What are the tips for layering nachos? ›

For better coverage, spread a single layer of tortilla chips, then scatter a minimal layer of your melting cheese of choice, making sure to coat the chips on the edges. Bake in a 300-degree oven until the cheese has melted, then scatter your beans or meats and vegetable toppings over the cheese.

What is the best melting cheese for nachos? ›

A: While you can technically use any type of cheese for nachos, some cheeses work better than others. The best options include Cheddar, Monterey Jack, Pepper Jack, and Queso Blanco.

Do you put meat or cheese first on nachos? ›

Spread out a layer of chips, followed by an even distribution of meat and beans, then lots--I mean lots--of cheese. Complete coverage guarantees you don't commit the cardinal sin of nacho making: the sad chip with no topping. Repeat until you have an impressive tray a few layers high, then bake.

Are nachos better in the oven or grill? ›

The cooking method

Drummond "nukes" the nachos in a microwave and the NYT grills them, but the best results, I find, come from baking, which heats the dish all the way through without making the base layer soft and chewy.

Do you put salsa on nachos before baking? ›

Preheat an oven to 350 degrees F (175 degrees C). Mix together the onion, tomatoes, parsley, olive oil, lime juice, salt and pepper in a bowl. Spread tortilla chips in a single layer onto a baking sheet, and spoon about 1 teaspoon of the tomato salsa onto each chip.

What are the best chips for nachos? ›

Best Tortilla Chips for Nachos: Santitas Tortilla Triangles

These chips don't have a ton of flavor on their own, but the crispness and sturdiness of these chips make them the perfect vehicle for carrying hefty dips or nachos loaded with all of the toppings you enjoy.

What is the secret to crispy chips? ›

The Double-Fry Method

The first round is at a lower temperature to cook the inside of the potato and the second time you'll use a higher temperature to make the fries golden brown and crispy. You can use a home deep-fryer or just heat the oil in a Dutch oven.

What to add to nachos? ›

If you want to stick with the classic vibes, we recommend shredded lettuce, cotija cheese, grilled corn, pinto beans, black olives, pickled red onions, or shredded chicken.

Should you bake or broil nachos? ›

Bake, don't broil. Some nacho recipes will call for broiling, but we usually recommend baking instead. It may take a bit longer, but the cheese will melt more evenly, and the toppings will warm up thoroughly this way. If you do choose to broil, be sure to keep a close eye on the nachos, as they can burn quickly.

What is the secret to making good nachos? ›

To avoid a nacho nightmare, I toughen the chips up with a quick pre-bake in a 350°F oven, and then sprinkle a protective layer of the shredded cheese on them to create a buffer between the chips and the rest of the toppings. The cheese will melt slightly.

What is the correct order for nachos? ›

Start with a base of tortilla chips, cheese, salsa, jalapeño, and any warm fillings like meats and veggies. Once the cheese melts, remove from the oven, add another layer, and repeat. This extra step ensures your nachos are well-covered and evenly baked from top to bottom.

How do you layer nachos so they don't get soggy? ›

Layer Wisely

Start by spreading a single layer of chips on a baking sheet. Next, add a thin layer of refried beans or black beans to help create a barrier between the chips and the wetter toppings. Then, sprinkle a generous amount of shredded cheese over the beans. Repeat this process for additional layers, if desired.

Is it better to make nachos in the oven or microwave? ›

Here's a fact: If you put a plate of tortilla chips topped with cheese in the microwave and zap them until the cheese melts, the cheese will melt way before the tortilla chips have the chance to take on any color or toasted flavor. With nachos baked in the oven, the chips toast while the cheese melts.

How many layers of chips for nachos? ›

As many as you like. I usually have one layer of chips, then cheese, more chips, meat of choice, choped tomatoes, onion, cliantro, salsa and sour cream.

Do you put salsa on nachos before cooking? ›

Method
  1. Tip tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.
  2. Grate over a good chunk of cheese (fontina is perfect, but cheddar will do). Add a pinch of crushed chilli flakes, then put under a hot grill for about 3 minutes to melt the cheese.
