TheKhara Masala Gosht or the Mutton Masala recipe is a really delicious mutton curry from the Pakistani cuisine. By now, you would have noticed that I post as many Pakistani recipes as I post the Indian ones.

Well, living in Dubai, with so many Pakistani neighbors, it is difficult not to. There is so much influence of the Pakistani cuisine in my everyday cooking, that I can’t tell the two cuisines apart.

Even when I was posting thisKhara Masala Gosht or the Mutton Masala recipe, Pakistani I was thinking for a moment which cuisine this belonged to. As both countries were one before partition, it is difficult to tell them apart. They are so similar in spices, technique, method. You will be forgiven if you can’t tell them apart if you are new to the Indo-Pak cuisine.

ThisKhara Masala Gosht or the Mutton Masala recipe, Pakistani is another favorite in my household. It is so simple and easy to make. But at the same time, it tastes so awesomely delicious.

Khara Masala means the whole spices. And as the name suggests, we will use a lot of whole spices in ourKhara Masala Gosht or the Mutton Masala recipe, Pakistani.

I have used a good amount of whole spices. Including cumin seeds, black pepper corns, shahi jeera, cinnamon, cardamom, cloves, bay leafs among others.

You can even make thisKhara Masala Gosht or the Mutton Masala recipe, Pakistani like a fry by drying up the water. But my hubby dearest prefers to leave some masala intact on any non veg dish. And hence I have left some gravy to it. But you can totally, dry it up, if you prefer it that way.

Tips for making theKhara Masala Gosht or the Mutton Masala recipe, Pakistani

  • Make really small pieces of mutton for easier cooking. Big pieces will make the cooking longer.
  • Add water as per your preference. If you like little masala, add more water. If you like to have it dry, completely cook till the water is dried.
  • Add water little by little as per necessity to get the mutton cooked. Do not add too much water. Keep stirring in between and add little water at a time.

Ingredients

  • 500 gms mutton cut into really small pieces
  • 4 tbsp oil
  • 3 onions finely sliced
  • 2 tbsp ginger garlic paste
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • salt to taste
  • 2 -3 cardamom
  • 2 -3 cloves
  • 1 inch cinnamon stick
  • 1/2 tsp cumin seeds
  • 1/2 tsp shahi jeera
  • 1/2 tsp black pepper corns
  • 1 bay leaf
  • 3 tbsp yogurt
  • 2 green chili cut
  • 4 tbsp coriander leaves / cilantro
  • 1/2 tsp garam masala powder
  • juice of 1 lemon

Instructions

  • Heat oil in a pan and fry onion till golden brown.

  • Add the ginger garlic paste and fry till the raw smell has vanished from it. (about 2-3 minutes)

  • Add the mutton pieces and fry really well till all the water has dried up from it and the mutton has browned a little.

  • Next throw in the red chili powder coriander powder, salt, cardamom, cloves, cinnamon, cumin seeds, shahi jeera, black pepper corns, bay leaf and cup of water.

  • Cook on low heat till the mutton is soft and tender. (Alternatively cook in pressure cooker for 2 - 3 whistles).

  • Once the mutton is done, add the yogurt and cook till the yogurt is well incorporated into the masal.

  • Add the green chili, coriander leaves and garam masala powder. Stir well. And cook on low heat till the oil starts floating on top.

  • Add lemon juice, mix and remove from heat.

  • Serve hot with roti or rice.
