Today I have a really yummy snowman shortbread cookies recipe to share with you. These cute Christmas cookies, made using the Tefal Cake Factory, are a fun and easy festive treat to bake with the kids.

The Tefal Cake Factory is a brilliant new baking product from Tefal that takes the guesswork out of baking and makes it really easy to whip up yummy sweet treats. Over the last few months I've been testing it out with some fun baking challenges set by Tefal.

I made these fun snowman cookies for my third baking challenge - the first was a gorgeous Strawberry Layer Cake, and the second some fun Monster Scones. Although Tefal's recipe was for plain shortbread cookies, I decided to add a festive twist to mine by decorating them with simple snowman faces.

As well as the Cake Factory, Tefal have also created a free app with over 200 recipes and ideas, and this yummy shortbread recipe is one of them. The app is really easy to use, each recipe has a full list of ingredients and step by step instructions.

It includes a timer too, though you don’t necessarily need it as the Cake Factory machine has a timer inbuilt – its five intelligent baking programs adjust temperature and time control to make sure you get perfect results every time, whatever type of cake or sweet treat you are baking.

The Cake Factory uses 6 times less energy than a conventional oven, so it’s perfect for eco-conscious bakers. It’s also great for the hot summer months when you don’t want to heat up the kitchen with a hot oven and it’s brilliant for multitasking too – being able to bake cakes and other treats whilst the oven is already in use for preparing a meal is definitely a bonus!

I like the fact that you the Cake Factory makes it easy to create small batches of baked treats too - I often tend to go overboard when I've gone to the bother of switching on the main oven and bake far more than we need!

Shortbread Snowman Cookies

Ingredients:

For the shortbread (makes 6):

  • 90g softened butter - cubed
  • 15g caster sugar
  • 25g icing sugar
  • 90g plain flour
  • 25g cornflour

To decorate:

  • 50g icing sugar
  • splash water
  • 6 smarties
  • handful chocolate chips

Method:

Place the butter, sugar and icing sugar in a mixing bowl and beat with a wooden spoon until the mixture becomes a well combined paste.

Add the flour and cornflour, then mix well until everything is combined. Pull the mixture together with your hands to form a ball of dough, then cover with cling film and chill in the fridge for an hour.

Cut the dough into 6 equal pieces, each around 40g in weight.

Roll the pieces of dough into balls, then place them in the muffin moulds and flatten them down into the base of each mould with your fingertips.

Place the mould in the Cake Factory and close the lid. Switch it on and set it to the single ‘cakes to share’ mode and adjust the timer to 25 minutes. Press start and leave the shortbread to bake.

Note: If cooking in a normal oven, preheat the oven to 160°C (Gas mark 2/325°F) and bake for 15 minutes or until cooked and golden.

Once the shortbread is cooked through, carefully remove from the mould and leave to cool completely on a cooling rack.

When the shortbread is cool, make the icing. Place the icing sugar in a bowl and add a splash of water. Stir to a paste, adding a little more water as needed until the icing is the correct consistency for spreading.

Drop a small spoonful of the icing onto one of the shortbread cookies and spread around with the back of the spoon to create a circle of icing on top.

Decorate with a smartie nose and chocolate chip eyes and mouth to make a snowman face.

Repeat with the remaining shortbread cookies, then leave the icing to dry and set.

Once the icing has completely dried, you can store the cookies in an airtight container, layered with baking paper to separate them, until ready to serve.
