Key Lime Pie Pudding Shots Recipe
Mmmm pudding shots! If you are looking for something that is a boozy cross between a dessert and a jello shot, pudding shots are perfect for you! (Well, if you are over 21 that is.) Easy to make, pudding shots are a great “adult” pudding recipe that is fun at parties, for tailgating, or just because!
Key Lime Pie Pudding Shots Notes:
● I used Cool Whip which is a brand name. You can use another brand of imitation whipped topping if you like.
● This recipe used Jello instant pudding, but you can use any instant pudding brand.
● You can purchase Graham cracker crumbs in the baking aisle of your grocery store, or buy a box of Graham cracker cookies, and give them a whirl in a mini-food processor to crush them quickly. Alternatively, you can insert your Graham cracker cookies into a plastic bag, zip the end almost closed (so as not to form an air pillow), get out a rolling pin, and roll it over the cookies inside the bag to form crumbs.
● For a different twist, try adding a splash (but just a little bit) of Malibu Rum to sweeten this up!
Key Lime Pie Pudding Shots Ingredients:
● 1 cup Graham Cracker Crumbs, divided
● 3 oz box Cheesecake Instant Pudding Mix (3.4oz)
● 1½ cups Cold Milk
● ½ cup Key Lime Rum Cream, chilled
● Zest of 2 limes, divided
● 2-3 drops green food coloring
● 8 oz tub Imitation Whipped Topping, thawed (Cool Whip)
● Whipped Cream, for garnish
● Lime Wedges, for garnish
Key Lime Pie Pudding Shots Mise en Place:
● 12 (2.5 oz) plastic pudding shot cups with lids if transporting
● Measuring Cup
● Bowl
● Spatula
● Whisk
● Zester
Key Lime Pie Pudding Shots Directions:
● Place the plastic soufflé cups on a large baking sheet.
● Add 2-3 tablespoons of graham cracker crumbs into the bottom of each soufflé cup. Set aside.
● In a large mixing bowl, add the cheesecake flavored instant pudding mix and 1½ cups of cold milk. Whisk until smooth and creamy.
● Mix in ½ cup chilled key lime rum cream; stir well.
● Stir in the zest of 1 lime.
● Add 2-3 drops of green food coloring (more if you want a really dark green color) and stir well to incorporate.
● Fold in 8 ounces of whipped topping and stir until the pudding mixture is light and fluffy, and you no longer see any white streaks of the whipped topping.
● Transfer the key lime pudding into the prepared soufflé cups, filling up to the top of each cup.
● Chill for at least 2 hours. If chilling longer, feel free to place lids on the pudding shots until ready to serve.
● Before serving, add a dollop of whipped cream, lime wedge, and lime zest to each pudding shot.
