Recently I received an email from a reader about her go-to pot roast AND its special secret ingredient.
Marlene calls this roast “Dillicious Pot Roast” (I changed it to Dilly Pot Roast to make it easier for readers to search for it on the site- tee hee!). Marlene says “You will not be disappointed, so don’t let the pickles fool ya… It’s the secret ingredient.”

And Marlene was totally right. We loved this roast. So much so it will be featured in our cooking show soon (coming soon!).

Ingredients for Dilly Crock Pot Roast

  • 3-5 lb chuck roast
  • lemon pepper seasoning -to taste
  • 2 Tablespoons bacon grease
  • 1 can golden mushroom soup (we’ve also tried regular mushroom soup)
  • 2 Tablespoons Worcestershire sauce
  • 1/3 cupsdillpickles – chopped

How to Make Dilly Roast in a Crock Pot

  1. Sprinkle roast with lemon pepper seasoning on both sides
  2. Brown roast in skillet (or browning slow cooker) in bacon grease
  3. Transfer to slow cooker.
  4. Mix remaining ingredients in a small bowl and pour on top of roast and cook on med 6-8 hours or till fall apart tender.
  5. Sprinkle with the bacon bits (if you fried 3-4 pieces) before serving, I just use the grease I save. (Me too Marlene!)

  • This recipe is low in carbs, however some low carb folks don’t like to use cream of mushroom soup. If you don’t mind, this is definitely a roast to throw in your low carb menu rotation that even carb lovers will love.
  • As with any of our recipes, carb counts, calories and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

Ingredients

  • 4 lb chuck roast
  • lemon pepper seasoning to taste

  • 15 oz golden cream of mushroom soup (or regular cream of mushroom)
  • 2 tbsp Worcestershire sauce
  • 1/3 cup chopdillpickles

Instructions

    We loved the roast… but just as delicious was the juices we saved as a base for cheeseburger soup. It was perfect with the pickles and beefy flavor as a starter!

    Just a question ~ Is this roast really a beef chuck roast? The picture of the meat makes it look like a pork roast in that the meat is lighter. Sounds good! Thanks!

      It definitely is a chuck roast (I think the lighting and the gravy are making it look lighter in the photo). However, I do think this would be delicious as a pork roast too! Thanks for the idea! Enjoy!
